Cultiv\u00e9 depuis des mill\u00e9naires, le shiitake fait partie de l\u2019alimentation quotidienne des Japonais, des Chinois et des Cor\u00e9ens. Il est appr\u00e9ci\u00e9 non seulement pour ses remarquables vertus nutritionnelles mais aussi pour son parfum \u00e0 la fois doux et puissant. Deuxi\u00e8me champignon le plus cultiv\u00e9 au monde apr\u00e8s les Champignons de Paris, le shiitake, est cultiv\u00e9 en France depuis les ann\u00e9es 70. <br><br>Les shiitakes contiennent du lentinane, un glucide qui poss\u00e9derait une activit\u00e9 anti-cancer et qui fait l\u2019objet de recherches scientifiques. Comme tous les champignons, les shiitakes apportent <strong>peu de calories<\/strong> et <strong>pas mal de fibres<\/strong>. Ils renferment de tr\u00e8s belles quantit\u00e9s de<strong> sels min\u00e9raux <\/strong>(et plus particuli\u00e8rement du cuivre, du s\u00e9l\u00e9nium et du zinc) et de vitamines dont de la <strong>vitamine D<\/strong> en proportions variables selon les conditions de leur culture.<\/p>\n\n\n\n<p><strong>Pour la po\u00eal\u00e9e de shiitak\u00e9s, il vous faut : <\/strong><br><\/p>\n\n\n\n<ul class=\"wp-block-list\"><li>une dizaine de Shiitak\u00e9s frais (je trouve les miens au march\u00e9)<\/li><li>Un oignon rouge ou blanc<\/li><li>3 cs de sauce teriyaki<\/li><li>3 cs sauce soja<\/li><li>1 cs sirop d\u2019\u00e9rable<\/li><li>Pinc\u00e9e ail fum\u00e9<\/li><li>Pinc\u00e9e oignon d\u00e9shydrat\u00e9 <\/li><li>Seitan Gourmet Grill de Lima Food<\/li><\/ul>\n\n\n\n<ol class=\"wp-block-list\"><li>Laissez marinez&nbsp;30mn&nbsp;maximum les&nbsp;shiitak\u00e9s&nbsp;dans la marinade avec l&#8217;oignon&nbsp;(sans le seitan).<\/li><li>Faites chauffer une po\u00eale avec un peu d&#8217;huile d&#8217;olive, y mettre les shiitak\u00e9s marin\u00e9s avec l&#8217;oignon, et faites revenir 3\/4 min.<\/li><li>Ajoutez le seitan coup\u00e9 en d\u00e8s assez large et prolongez la cuisson de 7\/8min.
